Early last week my youngest son decided to wait until the night before his field trip to tell me he needed a sack lunch the next morning. He usually eats at school so we don’t keep a lot of things on hand that can be packed easily in a lunch that don’t need to be kept cold.
The honest truth, I didn’t even have jelly at home to make him a sandwich. GASP!
I tried to talk him into just putting honey on his sandwich but he wasn’t really excited about that idea.
What’s a Mom to do when it’s after 8 pm and the grocery store in town is closed?
Make homemade Strawberry Jelly that’s what! It was delicious and it took less than an hour to make from start to finish!
How to Make Homemade Strawberry Jelly
Ingredients You Need
1 Pound Fresh Strawberries
1 Teaspoon Lemon Juice
2-3 Tablespoons Honey
Start by washing, hulling and quartering your fresh strawberries
Place the strawberries, lemon juice and honey in a good quality pot and cook on medium heat for 25 minutes
Continuously smash the strawberries with a wooden spook to help release the juices of the strawberries and help the jelly to thicken
I like to leave my jelly with small chunks in it but if you want a smoother texture you can food process the jelly
Place in a Mason Jar and refrigerate for up to a week
This Homemade Strawberry Jelly goes perfectly on our French Bread or Grandma’s Homemade English Muffin Bread! Both make the most delicious breakfast!
In the end, my son was thrilled that he had jelly on his sandwich for the field trip and to be honest I was pretty excited that I had warm jelly on my toast that evening for a snack. It was delicious!
If you’re not a strawberry lover, you can easily swap out the strawberries for raspberries or blueberries. This recipe would work just the same with other fruits!
